Now that the NASA Shuttle has officially been transferred to New York’s Intrepid Museum, we thought we should tell you about the “Out of this World” Sandtart Cookie that took flight to the International Space Station. The baking hands behind the “morsel of delicious goodness” is Bessilyn Piazza of Noni Piazza Bakery, a Houstonian, who has kept her mother’s recipe sacred and alive.
It was early 2010, when an astronaut working at the ISS sent Piazza a request about having her Sandtart Cookies aboard the shuttle with him, as he headed to space for what would be one of NASA’s last shuttle launches. ”[…]The news catapulted throughout the whole Houston, Texas viewing area, as well as the nation. In an instant, I became a local celebrity,” Piazza boasts, “It was a ride that I will never forget. Needless to say, the Cookie became famous and is now shipped all over the U.S. I can officially say, ‘It is out of this world!’”
Piazza’s Sandtart Cookies were a top seller at her local restaurant in Clear Lake, Texas, which she ran with her husband for 23 years. Patrons and visitors alike would crave her delicious powdered treats. Known as the traditional Italian Wedding Cookie, Piazza’s Sandtart Cookie recipe is quite different from the one you may be used to– “[…] I think my dear mother sprinkled some heavenly powder in the recipe,” says Piazza. “I can only tell you how emotional I get when I think that my late and precious mom has everything to do with the recognition of the Cookie. I prepare them lovingly in her honor.”
How did you get started in the restaurant business?
I tell everyone that I got into the restaurant business via osmosis, meaning not by trade, but by marriage. I enjoyed my life working in the corporate world, but the year that we married in 1971, my husband went from his background in design to helping his father in the seafood wholesale/retail business, into wanting to dabble in the restaurant business and that is how I landed in this business. Never in the kitchen, I had to sharpen my skills into the business side of the industry– costs, expenses, and building patronage.
Tell us the story behind your Sandtart cookies. Where did the idea and recipe come from?
My mother was known for her Sandtart cookies at family gatherings. When we opened The Italian Cafe she provided the cookies for us for many years until it became too much for her. So when she stopped, I started.
Sandtart Cookies have long been the Italian Wedding Cookie of choice; tell us what makes your recipe stand out.
The cookie was very popular at the restaurant. It was a designated drive for many patrons. I really don’t know why other than I think my dear mother sprinkled some heavenly powder in the recipe. It has been called the official Italian Wedding Cookie ever since I can remember. It adorns many weddings, social events, and celebrations.
How many years have you been married?
We have been married for 41 years.
So what advice can you give to all the brides out there?
My advice to all brides is to laugh a lot, don’t take things too seriously. If you are like me, you will not remember all of the commotion a week from now. Basically, give it a chance and hang on tight. If you think you love your husband now, just wait, you will have a love that you didn’t think you could nurture. However, with that being said, that doesn’t always mean you are going to like him!
What kind of desserts did you have at your wedding?
At our wedding, we had a huge, gorgeous, delicious wedding cake. If I had to guess, it had to be five or more feet tall.
We love fashion, so describe your fashion style to us– in and out of the kitchen!
I LOVE clothes. As long as I can still pull off the new style, you can bet I will wear it enthusiastically. Shopping is and has always been my forte. I love jewelry, and any kind of accessory that can add some pizzaz to an outfit. This stands true for in and out of the kitchen!
Is there one quote or saying that you live by each day?
With age, I have become more serene about life and all of the events that we have no control over. I live my life with the attitude of it doesn’t stay bad forever, neither does it stay good. That is life, no matter how rich, poor, young, old, famous and not-so-famous. That is the way God designed it bottom line.
